Hello there and welcome to August!
This time of year the farmer’s markets and grocery stores and maybe even your own garden are overflowing with abundance. You really can’t go wrong with any of the fruits and vegetables you might find there. And a ton of it can be enjoyed fresh and ripe. Now is the time to enjoy those peaches over the sink, my friend.
So today as a welcome to August type of email, I wanted to share some of my favorite seasonal finds as well as some recipes you can make with them.

Avocado
Chocolate Avocado Mocha Mousse! Basically one of those desserts that you can almost say is good for you since it’s filled with healthy fats from the avocados and raw cocoa and chocolate for heart health. At least, that is what I tell myself when I make this!
Berries of all types
Berries, cherries, blueberries, blackberries, and strawberries are all ripe right now! Make some blueberry pie for something sweet, or mix up a batch of lemon blueberry protein muffins for a seasonal breakfast. These muffins were one of the most popular recipes from July and it’s not hard to see why! They are soft, fluffy, fully of lemony flavor and great for snacks.
Or if strawberries are more your style, make sure to take a peak at some Strawberry Frosting, Strawberry Shortcakes, or (my personal favorite) Strawberry Shortcake Ice Cream Bars!!
Corn
I love sweet summer corn. Most often I like to just boil it for a few minutes to enjoy right off the cob, but it often finds its way into some salads as well like these Street Corn Pasta Salad and a simple Street Corn Salad.
Cucumber
My Polish family loves a good cucumber salad and this chilled one with dairy free sour cream is the perfect cool and creamy side dish.
Greens + Herbs
Salads are a good 50% of my diet in the summer as I just can’t get enough of the fresh greens and herbs. Try out my Classic Greek Salad (one of my most popular recipes!) or a Spinach and Strawberry Salad with Poppyseed Dressing.
Mango
While the best way to eat a mango is super messy over the sink, the next best way is to transform it into a fresh Mango and Pineapple Salsa to top tacos.
Peach
Who doesn’t love a fresh peach? Similar to mangoes, they are so good fresh this time of year, but also are delicious in a Peach Pie. You can’t go wrong with either way of enjoying them.
Potato
A fresh lemony potato salad is the perfect side dish to so many meals this time of year. It incorporates some fresh dill as well, making it an easy to mix up part of dinner.
Tomatoes + Zucchini
Friend, I have so many tomato and zucchini recipes scheduled to share with you this month!!
In the mean time, let’s get started with some roasted tomato and garlic soup and a big loaf of zucchini bread.
Bonus! Dessert!
August and summertime go hand in hand with a classic summer treat: S’mores. These gluten free and vegan s’mores cupcakes are one of my all time favorite recipes here at FVK. They take a few extra steps and a few extra minutes to prepare, but my goodness they are freaking worth it.
Every time I make these for a summer party, they are gone almost instantly. Just try them.
